Not just grapes and honey. We also ferment apples. Not just grapes and honey. We also ferment apples. They're just like grapes, with sugar, acid and tannin. So we called our first cider Apfelwein, like the Germans do. This is a blend of proper heritage cider varieties, Cremiere, Michelan and Foxwhelp from Orange in NSW. Naturally fermented and bottle conditioned, it's a Pet Nat style with fruit, tang and a touch of earth. Not filtered so a bit cloudy, and oh so fine for a picnic on a sunny day like today. One of my neighbours in our little Marrickville st One of my neighbours in our little Marrickville street is packing up the old family home this weekend. 60 years they've been there. His Italian immigrant father made wine there for about 50 of those years and this bottle is from about 15 years ago. Chris told me how they used to 'boil' the grapes, i realised after a while he was referring to fermentation, before ageing in demijohn. His dad made him rack the wine on the full moon, so he was practically biodynamic. Then it'd go into any bottle they could find. So tonight I'm raising a glass to the Marrickville winemakers who came before me, thanks for bringing the traditions of your homelands with you. (not drinking this though, its horrible, but the thought is nice). #wine #naturalwine #urbanwinemaking
