Made from old vine Carignan and Mataro off Wayne Ahrens and Suzi Hilder’s certified biodynamic Barossa vineyard. Lovely dark fruit didn’t need any maceration for colour extraction so was whole bunch pressed directly to tank. The juice was fermented with wild yeasts, is unfined and unfiltered with very low SO2 additions.
It was transferred to our Sydney warehouse in bulk and is available in bottles and in kegs.
While bone dry and refreshing is also shows the riper, blackberry like flavours of Mataro and Carignan. So a bit south of France in style – with an Aussie accent.
